Primitivo, also known as Zinfandel in the USA, is a variety that has been used on both sides of the Aegean Sea, from Croatia to Italy. Primitivo ripens earlier than other varieties, as the sugar and polyphenols are reach perfect levels during the harsh mid-summer sun. Its fresh taste, which combines ample fruitiness with good acidity, makes it a perfect match for pizza.
