On Tuscany's coast, near Livorno in the Maremma, winemaking master Stefano Casadei makes wine that rethinks our whole relationship with nature.
Tuscany meets California
Casadei was born from exhaustive soil research, in partnership with Sonoma winemaker Fred Cline. With the goal of crafting masterpieces from demanding international varieties like Cabernet Franc and Petit Verdot, Tuscan and American expertise came together. Stefano is also a trained expert, with degrees in oenology and viticulture from the University of Bordeaux.
"Biointegrale": vineyards of horses, ducks and sheep
Casadei practices "Biointegrale," a method that goes a step beyond conventional organic farming. Harvest uses Comtois horses instead of tractors, producing no exhaust and sparing the soil. In place of agrochemicals, ducks and sheep roam free to control pests and weeds. The wines ferment with native yeasts, with nothing added, and rest quietly in amphorae. This is Casadei's philosophy.
The single-varietal "Filare" challenge
Filare means "row" in Italian. Casadei deliberately bottles Bordeaux varieties, normally blended, as single varietals, drawing each grape's character to its limit. Organic-certified, full-bodied, with a long finish. These are scarce, precious lots.
