A year on from Nihombashi Mitsukoshi, this is our second collaboration. Fabio works the kitchen all eight days, finishing three pastas to order. Not a showy marriage, but a bottle that carries the story of the dish. The lineup leans on small, family run growers, rare even in Italy.
