Fabio × Swirl, The Isetan Pairing Set (4 bottles)

Isetan Shinjuku Italia Fair 2026, Fabio × Swirl. For the reservation-only event of September 15 to 22, the Italian wines we chose for the three pastas Fabio finishes in front of you. The counter pairing, boxed as four bottles to open at home.

A year on from Nihombashi Mitsukoshi, our second collaboration. Not a showy marriage, but a bottle chosen for each plate with one question in mind: why this wine. The lineup leans on small, family run growers, rare even in Italy.

In the set (four bottles) and the pairings

• Prosecco Rosé Millesimato (Bosco del Merlo, Veneto, sparkling), the welcome pour.
• Farinaldo Soave (Tenuta Grimani, Veneto, white, organic), for the chitarra with abalone and Nagano kinome.
• Balbinus (Terenzi, Toscana Maremma, a bold white), for the cacio e pepe of pecorino and fresh pepper.
• Blend Numero Sette (Terenzi, Toscana, red), for the premium Bolognese of Ozaki beef.

Three growers: Bosco del Merlo (Veneto), Tenuta Grimani (Soave, organic), Terenzi (Toscana Maremma). Four bottles, three families, three places.
