From September 15 (Tue) to 22 (Tue), 2026, the popular Italian chef Fabio (ファビオ飯) takes a reservation-only counter at the Isetan Shinjuku Italy Fair 2026. Over all eight days he finishes three signature pastas in front of you, and we at Swirl join him with Italian wine pairings I have chosen for each plate.
It is our second year together, after last year's Italy Fair at Nihombashi Mitsukoshi. I tasted through Fabio's dishes with him many times to find the glass that sits closest to each plate. Not fireworks, but a clear reason behind every pour.

Reservations open on September 2 (Wed) at 12:00 noon on the Isetan Shinjuku Italy Fair 2026 site. The site opens the same day at 10:00, and bookings begin two hours later, at noon, to keep access fair. Please check the Isetan site for how to book and the reservation terms. About the wines
For this pairing I chose rare wines, mostly from small growers with limited distribution even in Italy. Each bottle reflects the maker's philosophy and its terroir, and on the night I introduce every glass myself, including the reason behind the match.
